How do I get guards to not attack me?

I've had AC1 since it was released, and I just now decided to get AC2, a big step up and a much better game.
Guards seem to spontaneously attack Ezio no matter what, so how do I make them not? Is it because I keep stealing florins from people? Even then I'm just bumping into them so are the guards really that sensitive?

Now I have another question...
The guards were chasing me so I ran away until I lost them (yellow) and I sat on a bench to hide myself (blue), but the guard came up to the bench and stared at me for a couple of seconds.... and attacked me! I thought I was anonymous, but apparently not? Why?

First off, listen to the guards' warnings- they don't like it when you run around the rooftops in their presence, so if you want to avoid that, sneak past them, kill them or get out of their line of sight before the yellow arrow that indicates they're aware of you and not happy goes red.
Guards will also attack you on the ground if you're in a restricted area, try to get past them to something they're guarding (like a codex page) or have high notoriety/do other suspicious things like knock civilians over.
Also, escaping guards isn't the same as AC1. When you break the line of sight of your pursuers, you'll see a yellow circle on the minimap- going into hiding spots like benches or haystacks in that area is NOT SAFE, that circle indicates the area where the guards are searching for you and will break up groups, poke haystacks with spears and tell people on benches to stand up. Get out of that circle without the guards seeing you again and THEN pick a hiding spot.

Yeah, if you've maxed out your notoriety setting (the ring on the outside gets to 100%), you become semi-permanently notorious (the center icon of the indicator turns red). You have to remove wanted posters, kill officials or bribe heralds until the meter (the ring on the outside) drops all the way to 0%. Then you'll go back to being anonymous and the guards won't attack you on sight anymore.

Ah, I could never figure that out. It always seemed somewhat random to me that they would sometimes find me even in a hiding spot. It didn't realize it occurred while you were still in the "last seen" area.
Even if the guard finds you though, you can actually still get away. In the haystacks at least, you can assassinate the guard. You'll remain hidden and you'll pull the dead guard into the stack with you.

Simple.. Ask them politely to leave you alone. I am pretty sure they will stop bugging you.
On a serious note:
1. Lower your notoriety level by; ripping posters, bribing heralds, killing witnesses.
2. Like the 1st reply said, stay out of sight of the guards when climbing rooftops.
3. Hiding isnt as easy as the 1st one, they will try to find you when in haystacks or on benches. If you ever get into those positions, just choose the hidden blades and assassinate the suspicious guards and escape.

Additional to the above responds, if you came to the lonely guard on the roof (ever with other guards on the other roofs, looked away), stab that guard with hidden blade can halt them from alerting. I went through this game for fourth times and basic knew almost anything to do and to roll through so it's no problem for me to reaching Sequence 13 (repaired) within a night.
