So I haven't played Disgaea since 1, just got 4. I get most of the new stuff but I don't really see the point of magichange. I've never liked using monsters. Should I always use some so I can magichange them? What is the benefit of magichanging?

When you magichange 30% of the monsters base stats become your weapon stats, meaning that depending on how good your weapon is this could either be good or bad. Magichange also lets you use the monsters magichange specific skills, some of which are really good. When you magichange though both characters gain exp and mana and after the monster expires it frees up another spot to deploy a unit. That's the basics of it, in my limited experience a monster of around the same level of whoever your magichanging with will do a lot more damage than whatever weapon you have.

InD4 and the Vita version of D3, it's always good, as the stats can't be lower. At worst, you always get a +1.

There's rarely any reason to use magichange. Except dual magichange (when you really need to inflict an outstanding amount of damage).
Though magichange is heavily used when leveling up.
Also new to this game is monsters fusing together to create a large monster. The main benefit is increased attack range and more attack panels (sometimes).

General use, magichange and its variants are worthless.
For grinding, magichange is wonderful. Since grind maps should only take one turn to clear, you get the benefits without having to worry about having less to deploy and only having a small stat bonus vs. two units worth of damage. Plus, giant magichange alters the area of effect to be larger.
Experiment with magichange on a 1 turn map and see for yourself.
