Yes, everything carries over.
After the ending scene and the credits, you are on Mean Street South, with all your money, sketches, challenges, and quests.
The only thing you cannot go back and do is if you missed painting a star or getting something before you first arrived on Mean Street.
Along with the good, you are stuck with the amount of paint and thinner canisters you have -- because you do not fight any more bosses.
I suggest you take care of any train stations you haven't opened, because you only have a limited time to do certain things.
"ONE TOON'S TRASH" is something you need to take care of when you start a "new game" slot. Do not give up anything, until you have given 20 things to the museum. Then, you can buy them back at a 50% mark-up, and continue with what you had wanted to use them for.
The regular Gamefaqs and Gamespot forums have a list of what items can be used.

Wait a minute! I may have misunderstood.
When you turn on your console, insert the disc, and start Epic Mickey 2, you see the three game slots to choose from, and you can select a slot and delete that game. Then, "new game" appears in that slot, and everything is erased. If you have done the "delete" then you lose everything, and you start from the first introduction.

Uhm...
1) This game has no new game plus. A new game is a new game, nothing is carried over
2) There is only one save file, meaning a new game will erase all progress you made in the past save file
3) Trophies done (challenges) stay as done in the list, however the progress for all of them is reset (for example, the challenge for befriending 100 enemies says it is done in the list, but the progress for it starts back at 0)

I read this question at the bottom section of the General Forum of Gamespot.
http://www.gamespot.com/disney-epic-mickey-2-the-power-of-two/forum/Hence, the confusion, due to the differences between platforms.
Sorry, that I gave an answer for the Nintendo Wii version that was programmed in the USA, which does not carry over to the PS3 version that was done in the UK.
