I think its more to do with the positions of the sliders then the preset you choose to customize. Ive two different male Hawkes both of different presets but both very similar, and the rest of the Hawke family are the same for both characters.

Character creation changes it somehow. i got stuck with the default ones too, even though i customized my character a bit. My brother got different looking ones for some reason when he customized (your mother changes too)

I think it has to do with your chosen skin tone. I had one character that was pale and I got the default, then I made a character that was dark-skinned and they were too. Essentially, their race changes with yours.

What determines their appearance is the preset from which you customize your character. If you kept the first preset, you will get the default Bethany and Carver appearance. It was done this way to keep a family resemblance, as long as you don't modify him/her too much from the preset.

So, Mine Changed... Bethany lost her eyeshadows, which made her super-ugly, Carver got a "Witcher" Look, and Hawke's Mom Got super hot...
My face preset was beetwen the last, and I didn't Use the one with the blood mark over the nose... -
Yeah same here, first time i played i rly did change a lot of my Hawke no were close to the default look(played a male), the 2nd time i took a female(why cant i get the default female hair staly i rly like that one) changed her and every one(bro, sis and mom) looke stupid.Bethany looked like a scarcrow but the other way around the head that was too small for the body.Carver like he was in his 50 atleast. The mom i dont rly remeber i was too shocked after the other too. Deleted my char almost instantly. Oh and my Hawke looke good thats the real shame its rly take take time to make them right.

IF you have the black emporium DLC, You could chose a crappy preset if it makes beth/carver/mom look good...
Then you go to the mirror of transformation in the emporium, and switch up... -
When at the beggining you choose the preset to start costumize your character, the one you choose determines the face that Carver and Bethany will have.
-
The character you create determines you family's looks. Here is a chart screenshot of how different presets determine which family look you get:

You'll see there are three variations of the Hawke Family, and the presets that determine which you get. If you particularly want one set of Hawkes, use the corresponding preset, and you can always tinker with your character's look in the Black Emporium.
Have fun :)
