I'm moving along im my first playthrough but I want to start another game with a different character. Will I be able to start another game and still keep the one I'm playing now saved? Then I could switch between games if I get bored. I should be able to but I just want to make sure seeing how it automatically saves everything.

Yes, but you would need to manually save. Just hit start and choose save game. You can save over an existing game or create a new save. I would hard save often and create a few saves throughout each playthrough, just in case you make a decision you don't like.

Choose "new game" at the start menu to make a new character.
Choose "load game" at the start menu and then (square) to switch to a different character's set of saves.
You are allowed a maximum of 10 characters for DA:O. If you create all 10 characters in DA:O you are allowed to continue to play all of them in Awakening and the followup DLCs (Golems, Witch Hunt).
If you make 5 characters in DA:O and take all of them on into Awakening, you will not be able to create any new DA:O characters, because DA:O will see the Awakening saves as separate characters.
Saves for Darkspawn Chronicles and Leliana's Song DLCs count against your character limit in DA:O.
You can make multiple saves for any character, and that is actually highly recommended as a habit. You might want to retry a conversation or make a different choice once you realize the consequences.
Save files are locked, and cannot be backed up to PS+ or to storage devices, though in theory they can be transferred to a new PS3 (while being deleted from the original PS3 along with your PS account).
