No, neither of those are graphics king, but pretty, yes.
Crysis, funny enough, still is. Through mods, that game still surpases everything that devs have put out so far. Coming close to Crysis is The Witcher 2, BF3 and Crysis 2. I still like to through out Shattered Horizon as well.

Uncharted 3 does have moments of pure awe like when you walk in the desert, but it looks nowhere near as good as games like Crysis, The Witcher 2 (PC), and Metro 2033.

Crysis 2 with the new maldo 4.0 mod is probably graphics king IMO.
With better use of tessellation, penumbra shadows, SSDO and realtime reflections.

Even some of the more hardcore games like the IL series has an "Arcade mode" or easy mode so you don't have really learn how to fly.
