The Basics
Eternal Champions was a 3D fighting game that originally appeared as a CD title for the Sega Genesis (using the Sega CD peripheral). A Saturn update was canceled, then reinstated, then canceled again by Segasoft. The last we heard, after the Saturn version was shelved, a PlayStation version was planned and approval from Sega of America was pending for the publication of the US version.
WHAT HAPPENED?
The Saturn version of this title was supposedly canned because Sega of Japan didn't want competition for home versions of Virtua Fighter and other similar Sega arcade fighting games.

The Basics
Fox Hunt was to be a spy spoof of "regular guy turned spy" Jack Fremont that played somewhat like an interactive novel. Your job, should this game have actually come out on the Saturn, would've been to keep the Russian terrorists from destroying Los Angeles. The game would've included about three hours of interactive FMV and about 20 puzzles or missions for you to complete based on your previous decisions. You could have arrived at one of ten different endings.
Fox Hunt would have also included some celebrity appearances from Timothy Bottoms, George Lazenby, Rob Lowe, and "hundreds of extras." The soundtrack lineup included the Violent Femmes, Sublime, and Faith No More.
WHAT HAPPENED?
We're not really sure what happened here, as the game was simply canceled. But we wonder if Capcom questioned whether gamers would seriously consider saving LA from a terrorist disaster a worthwhile exercise. Moreover, the PlayStation version came out in October of 1996 and received a pathetic GameSpot score of 2.7. You can read more here.
