    disregard the sage or alchemist comment it is wrong

    When you master a white mage ability and a black mage ability, as a human you can become a Blu Mage, as a Nu Mou you can become a sage or alchamist (not sure) but with 5 black mage abilities mastered you can become a time mage as a nu mou or moogle, and that is it.
