Well there are plenty in the nether. I can't remember specifics either though. I saw some underground, and I think I saw some in the swamp in the NW corner of the map.

I still haven't been able to get brown or red mushrooms to grow in my makeshift pitch dark cave for some reason. when I was exploring the stronghold and cavern for 5 hrs and came back to see if shrooms spawned nothing.

Yeah. There's a great place below the village in the south end of the southern desert with four slime chunks touching each other. Watch out for all the lava, bring a water bucket! We pulled stacks of obsidian out of this place before deciding to make it our slime farm!
Coordinates X:48 Z:320 to X:64 Z:304, make a square below elevation 16 (I used elevation 10 but 11 or 12 would work better for avoiding lava).
Coordinates X: 64 Z:304 to X:80 Z:288, make a square below elevation 16.
Coordinates X:80 Z:288 to X:96 Z:272, make a square below elevation 16.
Coordinates X:80 Z:288 to X96 Z: 304, make a square below elevation 16.

I tried entering this seed and got an all water world with the exception of 1 island.
I checked, double checked and triple checked the numbers and still kept getting the water seed. Any suggestions?

You may have forgotten the hyphen. It's a negative number, this seed.
Also, you might be behind in updates. Make sure you're connected to the internet when you turn on your 360 and boot up Minecraft. Also make sure you're loading from the proper storage device.

It will have changed from the word you typed to letters. As far as your question goes just type it exactly in the seed enter spot including the " - ".
