Gold tools may suck for durability, but they have the highest mining speed and I think damage/defense as well. So you can be the candle that burns brightest using gold.
Mods aren't happening without MS's permission, and I doubt they'll allow it. So that means you can choose between gold apples and powered rails for the time being and the near future, the best uses of gold for all intents and purposes.

I know at one point (aka the wiki) gold tools get enchanted easier; I don't know if that's the case for us, but it'd be easier to enchant a gold diving helmet than a diamond one.
But, gold pick axes are faster than others, which could be useful in competitive games.
Also, it is used in Glistering Melons, and hence, Instant Health Potions (the only other healing potions are health-over-time and require Ghast Tears). They are also one possible way to get Splash Potions of Instant Damage II, aka grenades.
And lastly Golden apples are a decent emergency food. In a battle and notice your health isn't regenerating because you are too hungry? They not only fill your hunger bar 2 points, but also regenerate 4 health, too (over 5 seconds).

Yeah, you can get some better enchantments at slightly lower levels, but it's no longer as significant as it once was. When the highest level needed for enchanting was 50 it was much more noticeable.

It's not an effective armor or tool making material, and you can't use it for that long as a tool.
Unless I REALLY want to make a Tower of Pimps, I don't really see the real purpose of it.
You pretty much answered your own question. Powered rails and a Tower of Pimps. Also I hear Golden Apples are good if you're an adventuring type.

Hp potions, powered rails, golden apples, clocks...
And 4j is/was looking into adding "supported" mods to xbox, kind of like Obsidian taking Fallout 3 mods and adding them to New Vegas, ie, gun nods, sleeping bag, night vision, cybernetics.

I made a few golden helms for enchanting when I was building my underwater fortress. Water Breathing IV sure helped a ton.
