For me, it would have to be Fragile Dreams.

Boom Blox Bash Party
The creative motion controls work flawlessly and it's great to play with family and friends. The perfect party game.

The Legend of Zelda: Twilight Princess b/c I really enjoy the gameplay (I think that the motion controls work pretty well too), and it's one of my favorite Zelda games too.

Has to be Skyward Sword. For better or worse, Nintendo was finally able to make a relatively convincing sword interface.

Fishing Resort. Great use of motion controls. Pick up and play casual gameplay with a good amount of content. No Mii support but you can clothe your avatar however you want.

Skyward Sword. I know some people don't like the motion controls. I thought running down the spiral at the end of the game (in the "past"

with hundreds of goblins chasing me, waving sticks and shooting arrows throwing bombs and whatever, and slashing my sword to send them flying by the dozens was pretty darn awesome.

MANHUNT 2 UNCENSORED.
The Wiimote and Nunchuk were meant to be weapons, kids. Horrible, horrible weapons.

Red Steel 2 and Excitebots
There are better games on Wii, but those are both fantastic games that really put motion control to terrific use effectively and in interesting ways.

The Super Mario Galaxy games best represent the Nintendo experience in general, not just on the Wii. But regarding the hardware specifically, Skyward Sword made the best use of it.
