As long as your ps3 has enough ventilation, it won't overheat with a 7200 rpm. Use the hardware charts on tomshardware.com to one that runs cool.
If you don't do a full backup before putting the new hard drive in, you should connect the ps3 to the internet and look at your trophies so that it syncs all of your new ones with their servers. Then when you go online with your new hard drive, all the trophies will be put back onto your ps3.

The Trophies are tied to your psn user name and is also stored on the HDD. If you are connected to psn the trophies will synchronize so that you can see your trophies from any computer (given that you logon to psn via that computer). If you're not connected the trophies only exist on your ps3.
