Why are there no UGLY people in these fighting games?

Eh, I'd say she just has the generic anime girl face converted to 3d look. Kinda like what say, Nadia would look like in 3d. Race becomes kinda neutral outside of skin color or hair when it's in that style.
They did try and make her look of African descent in her 3rd Strike select portrait though.

Well she used to be darker too. She got lighter and has the thin nose and smaller lips, which is generic of course, but when they do "attractive" black people they do that anyways. Even with real people sometimes (skin lightening, etc.)

I don't know if its "lighter" so much as brighter lighting making everything brighter and her appearing lighter as a result.
As for her looking more caucasian, the art style of the game makes characters seem somewhat generic in appearance making everyone look like the same race with different color hair and skin, there do seem to be a few exceptions ti this such as Balrog and Blanka.
